The goal for Sweet Yellow is that it should be the sweetest coffee on Darterra's menu. To do that, they have mixed different yellow varietals, which are known to produce sweeter beans: the yellow color on the cherries reflects more sunlight than red cherries - this reflection makes yellow cherries cooler, slowing down the maturation process: a slower maturation means that the beans have better conditions and more time to develop sugars. They have chosen the very ripest cherries and pulped them. The result is a very round mouthfeel that brings swiss milk chocolate and toffee paired with citric acidity of yellow fruits.
Daterra is one of the most sophisticated coffee operations. Daterra is located near the city of Patrocinio, in the state of Minas Gerais, Brazil. This is the classic and famed Cerrado region of Brazil, where the fertile land is flat and ideal for coffee growing.

The quality team will then make decisions on how to utilize each of these coffees and where on the menu they will be used.
